A Budget-Friendly Bowl for Meal-Prepping
Have you ever wanted to order egg rolls and nothing else? I can honestly say that I have! I mean, I usually end up adding in some other items because leftovers are the best! While ordering Chinese take-out isn’t the most costly meal, it certainly can add up if you do it too often. In addition to taking a toll on your wallet, it can negatively impact your waistline as well.
On the other hand, preparing meals at home is almost always more budget- and flat belly-friendly! There are several reasons for this. For starters, when you order takeout, you’re paying more money because someone else is doing the work. If you make it yourself, you cut out the middle man! Secondly, when you cook at home, you can buy ingredients in bulk, so you end up getting more meals out of each purchase. Plus, many of the ingredients you need for this egg roll bowl can probably already be found in your kitchen! Finally, as far as health goes, cooking at home guarantees that you know exactly what you’re consuming.
When we think about meal prepping, many of us seem to have a one-track mind. What do I mean? We assume that meal prepping always has to be about chicken and broccoli, salmon and asparagus, or any other bland protein and veggie combo. Once you realize that your prepped meals don’t have to be the same old boring things week in and week out, your life will change! This egg roll bowl is just one example of a delicious option that is perfect for prepping ahead of time.
A Fantastic Blend of Flavor and Nutrients
This delicious egg roll bowl gets its flavor from a combination of lean pork loin, mixed veggies, and low-calorie seasonings full of Asian flare! It truly is like eating an eggroll in a deconstructed form.
Above, we briefly touched on how this yummy egg roll bowl is better than take-out, and we’re going to dive into that a bit more here. Traditional egg rolls are not exactly healthy, but our lower-carb, high-protein twist on this take-out favorite makes it a much healthier option!
On average, one regular sized pork egg roll comes in at 240 calories and contains 45 carbs, 5 grams of fat, and only 4 grams of protein. In comparison, our drool-worthy egg roll bowl comes in at 322 calories with just 18 carbs, 15 grams of fat, and a solid 30 grams of protein! It is important to note that while our recipe contains more fat, the majority of it is the “good” kind!
Try Our Easy Egg Roll Bowl
Anytime one of our recipes clocks in at less than 30 minutes, we tag it as a quick-and-easy meal. This one easily meets that requirement, as it only takes 25 minutes total to prepare. Aside from the two small bowls you’ll need to create the sweet chili mayo and egg roll sauce, this recipe can be made in a single skillet. Fewer dishes mean easier clean up, so we love that!
Begin by combining the low-fat mayo and sweet chili sauce in a small bowl and set it aside. You won’t need this sweet chili mayo again until the very end, so you can store it in the refrigerator if you like. In a second bowl, combine the soy sauce, hot sauce, garlic powder, and minced garlic to create the egg roll sauce. Brush it evenly over the pork loin.
Add the sesame oil to the skillet and heat it over medium high. Sear the pork for one to two minutes on one side. Bump the heat up to high and flip the pork over, cooking the opposite side for about five minutes. Give it one more flip back over to the other side and cook for five more minutes. Remove the meat from the skillet and allow it to rest for a few minutes before you cut it into one-inch pieces.
While the pork is resting, sauté the onion in the same skillet over medium heat for about five minutes. Add the veggie slaw to the skillet and saute it for three or four minutes. Then, stir in the ginger, garlic, and soy sauce to evenly distribute. Add your pork pieces back to the pan just long enough to warm them back up.
Remove the skillet from the heat and portion out your servings. Sprinkle some sliced green onion on top of each bowl with a little sweet chili mayo and enjoy!
- 16 ounces pork loin fat removed
- 2 tablespoons sesame oil divided
- 1 red onion sliced
- 1 bag veggie coleslaw mix
- 1 tablespoon soy sauce
- 1 clove garlic minced
- 1 tablespoon ginger minced
- 1 green onion sliced thinly
Sweet Chili Mayo
- 1/4 cup low fat mayonnaise
- 2 tablespoon sweet chili sauce
Egg Roll Sauce
- 3 tablespoons soy sauce
- 1 tablespoon hot sauce
- 2 teaspoons garlic powder
- 1 teaspoon garlic minced
Mix together sweet chili mayo ingredients in a small bowl and set aside
Combine egg roll sauce ingredients and brush over the pork loin
Heat 1 tablespoon sesame oil in a skillet or wok on medium-high heat
Place pork in the pan and sear for 1-2 minutes
Increase the heat to High, flip the pork over, and cook for 5 minutes
Flip over once more and cook for another 5 minutes
Remove from the pan and let rest
After 2-3 minutes, cut into 1” pieces
Meanwhile, sauté onion in the same skillet over medium heat for 5 minutes or until translucent
Add the veggie slaw and sauté for another 3-4 minutes
Stir in ginger, garlic, soy sauce for 1 minute
Add the pork back to the pan to warm
Remove from heat and top with green onion and sweet chili mayo
