Is there anything better than tender, slow-cooked pork that’s been simmering and soaking up delicious flavor all day? In my mind, not a chance. This slow cooker honey lime pork cooks to perfection and melts in your mouth, and the best part is that it only takes 3 to 4 hours. You can throw it all together in the morning and be eating with friends and family by lunch– hardly any work required!
There aren’t too many ways you can mess up slow cooker pork either. Chances are good that it will always be delicious. But for this recipe, I knew I couldn’t go wrong with honey, lime, soy sauce, garlic, and ginger. After all, when does this combination of ingredients ever fail to impress? Never! Plus, the ingredients we’ve chosen here are natural and low calorie, making this a super nutritious meal, as well. And if you want this dish even spicier, you can always add some chili flakes, freshly sliced jalapenos, or some sriracha!
What Makes this Dish so Delicious?
It starts with the type of pork. For this recipe, I decided to go with two pounds of tenderloin. Each tenderloin is usually around one pound, so you’ll probably need two of them. I love this long, narrow, boneless cut of meat because it’s extra lean, tender, and versatile. Plus, I always try to buy it when it’s on sale and then freeze it for later. However, the only problem with pork tenderloin is that it can easily dry out, so you have to be extra careful if you cook it in the oven or on the grill with a dry rub. In those cases, I use a thermometer to ensure it doesn’t get overcooked.
But you don’t have to worry about drying out your tenderloin with this recipe! By slow-cooking the tenderloin in this savory sauce, you’re guaranteed to have mouth-watering pork that is tender and juicy. Just make sure to sear the tenderloin in a pan before adding it to the slow cooker. That sear will seal in the juices and flavors. Plus, it’ll speed up the cooking time and bring out those rich, caramelized notes. As a rule of thumb, I almost always sear meat before slow cooking it.
You Won’t be Able to Get Enough of Our Honey Lime Sauce!
Seriously, I just want to bottle this marinade and have it with everything. It’s tangy, sweet, salty, and has a little bit of heat from the garlic and ginger. Not to mention– for such a flavorful sauce– it’s surprisingly healthy! After my whole family went in for seconds, the slow cooker bowl was almost gone. I even made this recipe again for friends only a couple of days later because I knew it would impress.
How to Serve Slow Cooker Honey Lime Pork
While this pork is perfectly delicious without a garnish, I threw on some freshly chopped cilantro to freshen up the dish and give it a little color. However, I know not everyone may be a fan of cilantro, so some sliced green onions would be great, as well.
I also decided to serve this slow cooker honey lime pork with some cilantro lime basmati rice (a Chipotle copycat recipe), which tastes just as good as the rice from Chipotle but forgoes all that unhealthy butter. You can also throw in some sauteed green beans or asparagus for some added fiber. Just make sure that sweet and savory sauce is drizzled over the whole plate!

- 1/3 cup low sodium soy sauce
- 1/4 cup honey
- 1 lime juice only
- 2 garlic cloves minced
- fresh ginger one-inch piece, grated
- 2 tablespoons avocado oil
- 2 pounds pork tenderloin
- salt and pepper to taste
- 1 tablespoon cornstarch
In a small bowl, mix the soy sauce, honey, lime juice, garlic, and ginger. Set aside.
Heat the avocado oil in large pan over medium/high heat. Season the pork lightly with salt and pepper. Then sear on both sides for 4-5 minutes or until golden brown.
Place the pork in the slow cooker. Then pour the sauce over it. Cook for 3-4 hours on high or 4-6 hours on low.
After the pork is done cooking, remove it from the pot. Then slowly stir in the cornstarch into the sauce in the slow cooker. Turn the slow cooker to high. Let the sauce simmer until it thickens. Then pour it over the pork.
